Why tapsilog?
Aside from the fact that it's my favorite food in the whole wide world, and could live off Tapa King's Tapa Prince forever, I think it represents me and my country pretty well. Besides, hotdogeggandrice.tumblr was just too long.
During one of my history classes with famed historian Ambeth Ocampo, he said that one of the best things the Spanish brought over to the Philippines was the idea of prito or cooked meat. I could not agree any more. Therefore, the tapa, together with its fried egg (a food I always acquaint with the Americans for some reason), garlic rice (so very Pinoy, and atchara (could this be Chinese, or am I just pushing it?), is the best thing to describe us.
Oh and lastly, pinaglihi ako sa tapsilog. Don't believe me? Ask my mother.

I thought it was about time for me to post a picture with my favorite food in the world.. tapsilog! This is a different version though, with shredded tapa instead of the normal juicy slices of beef.
This was taken 10 days before I moved here. You can probably tell by this picture that I maxed out my time under the sun knowing very well that I wouldn’t get a lot here. This was also the last race I worked on with eXtribe,inc.
